Our middle school Green Club finished up their first semester by cooking and eating food together in the school kitchen. We tested out a simple recipe called “Vegetable Pancakes” developed by Education Outside’s Cooking the Common Core Curriculum. All the cabbage and kales were harvested from our school garden and combined with peeled carrots, eggs, salt and pepper, green onions, and flour to make this yummy treat. Students each had the opportunity to make two pancakes each. Unfortunately there wasn’t enough for thirds, but everyone was able to have a copy of the recipe to try at home.
